A winter dessert (or breakfast!): Pear, Ginger and Macadamia Crumble Pots

Come winter, I’m a bit of a crumble fiend. Especially with dollop cream. In the past, I couldn’t often be bothered to make it, because I found the process of rubbing butter into flour too involved and messy. I have this irrational idea that if I have to get the flour out of the pantry, it’s all going to be too much effort.

An earlier round of the IQS program introduced an apple crumble which used a combination of almond meal and oats in the topping, and it has revolutionised my crumble-making. Plus, the addition of oats makes it breakfast-friendly, in my book. πŸ˜‰ Rani from You Totally Got This also uses this topping in her baked apple crumble – check it out, it’s an easy and delicious family sized dessert.

These pear, ginger and macadamia crumble pots use no added sweetener at all – I feel that pears are sweet enough already. They are simple and quick to make, requiring very few ingredients. I opt for individual servings so I don’t over-indulge. (That’s a lie: it’s actually so my husband doesn’t eat more than his fair share!) Plus, you could double the recipe and make a couple of extra pots, to store in the fridge for breakfast. Continue reading

Autumn Spiced Hot Chocolate: For your next camping trip (or to keep in the pantry for your next Netflix binge!)

A couple of weeks ago, we went on our first overnight family camping trip. It was also MY first camping trip. The idea of sleeping rough, barely separated from The Elements has never appealed to me. All that dirt. Those uncomfortable stones. The wind, argh! For years, I’ve rejected my husband’s suggestions that we go hang out in a tent.

Then he managed to catch me at the right time. Knowing that I’ve been trying to slow down, to make time to read and write again, he pitched it in just the right way: camping in peace and quiet, free from obligations, sitting next to a fire reading my book and writing in my journal. He finally won me over. We did a night away in a valley just out of Canberra in a quiet camping ground.Β  Continue reading

Recipe: Toasted Oat, Hazelnut and Cacao Granola with Rosewater

The world really does not need another granola recipe. Every week I see a new recipe. It’s astonishing really, that we have not run out of combinations of oats, nuts and seeds.

So I never had granola on my list of possible recipes to test. Until, I wanted to enter the photography competition for the Eat Drink Blog Conference, which had a breakfast cereal theme. I came up with this quick recipe, using what I had, for the purposes of taking a photo – and then enjoyed eating the end product so much that I thought I should share it here after all!
